The Wuyi Mountains in Fujian Province are one of China's most celebrated tea regions — a dramatic landscape of rocky cliffs, misty valleys, and centuries of tea-making tradition. Heat water to 90–95°C. For black teas, use 3–5g and steep 2–3 minutes. For oolongs, use 5–7g and steep 1–2 minutes. Each tea can be re-steeped multiple times — a great way to explore the full range of flavors across an afternoon.
